Beaver Run Resort & Conference Center Welcomes New Food & Beverage Leadership Team

At Beaver Run Resort & Conference Center, we’ve always believed that the key to a truly exceptional guest experience lies in the details—especially when it comes to food and beverage. That’s why we’re thrilled to introduce our new Food & Beverage leadership team, who are bringing fresh energy, innovative ideas, and a wealth of experience to our resort.

Reimagining Food & Beverage at Beaver Run

Over the past year, we’ve been hard at work reimagining and evolving our food and beverage offerings to better serve you, our valued guests. This transformation includes a $1.3 million renovation of the Skywalk Market, now a modern and inviting space offering something for the entire family.

But a beautiful space is only part of the equation—what truly makes the difference is the team behind it. That’s where our new Food & Beverage leadership team comes in.

Meet Erik, Our Director of Food & Beverage

Leading the charge is Erik Ruminski our new Director of Food and Beverage. Erik brings over three decades of experience in the food and beverage industry, with a career that has spanned hotels, resorts, university dining, and corporate dining. His journey began with formal training in Culinary Arts at Johnson & Wales, and has since taken him to notable roles at the University of Chicago and JP Morgan Chase Tower. Erik’s entrepreneurial spirit led him to establish a successful restaurant in Chicago and a thriving catering business in Arizona.

Erik first joined the Breckenridge community in 2017, where he served as Executive Chef at Breckenridge Ski Resort. He quickly rose through the ranks, eventually leading the Corporate F&B Central Support Division for Vail Resorts’ West Coast Ski Properties. Now, Erik is bringing his passion for hospitality and his love for the Colorado mountains to Beaver Run. Outside of work, you’ll find Erik mentoring the next generation of culinary talent or enjoying the great outdoors.

Introducing Reginald, Our New Resort Executive Chef

Working alongside Erik is our new Resort Executive Chef, Reginald Nebab. With 20 years of professional experience, Reginald’s culinary journey began in San Francisco, where he earned his degree in Culinary Arts in 2004. From there, he apprenticed under a former White House Chef and joined the opening culinary team at Wynn Las Vegas Resort and Casino.

Reginald’s career continued to flourish at Caesar’s Entertainment, where he worked closely with world-renowned chefs. His expertise spans from classic American steakhouse to upscale casual cuisine, and he has a strong background in restaurant management and banquet operations. Reginald is not only a skilled chef but also a dedicated mentor, passionate about developing future culinary professionals.

Welcoming Kenny, Our Executive Chef de Cuisine

We’re also excited to introduce Kenny Zecena as our new Executive Chef de Cuisine. Originally from Southern California, Kenny’s passion for cooking began at the age of five. He officially started his culinary career in 2015, earning an Associate’s Degree in Culinary Arts and a Bachelor’s Degree in History. Kenny’s journey took him to Las Vegas, where he held various culinary positions, including working with Chef Reginald Nebab at the Oyster Bar and Fulton Street Food Court at Harrah’s Las Vegas.

Kenny has also worked with celebrated chefs Michael Mina and Robert Irvine, and has cooked for high-profile clients like the U.S. Men’s Basketball Team and Former Nevada Governor Steve Sisolak. Outside the kitchen, Kenny enjoys developing new flavors and dishes, as well as indulging in hobbies like hiking, fishing, and motorcycle riding.

Say Hello to Whitney, Our Manager of Restaurante Spencer's and Base Nine Bar

Rounding out the team is Whitney Browne, our new Manager of Spencer’s Restaurant and Base Nine Bar With 16 years of experience in the hospitality industry, Whitney’s career has taken her from small restaurants to major hotels, including Marriott and Hyatt. Most recently, she served as Director of Restaurants at Hyatt Regency in Monterey, CA.

Whitney’s diverse background allows her to curate unique and memorable experiences for our guests. A Colorado resident for over 20 years, Whitney is thrilled to be back in the mountains full-time. When she’s not at work, you can find her enjoying all the outdoor activities Colorado has to offer, from climbing and kayaking to skiing and fishing.
